This article highlights a University of Pittsburgh industrial engineering senior capstone project coordinated by Assistant Professor Louis Luangkesorn, where a student team engineered an ergonomic production solution for Legacy Café in Pittsburgh’s Hill District.
To help the owner scale production of her signature “Heritage Collection” cookies while mitigating repetitive strain, students designed a custom mechanical extrusion and tamper system. The intervention boosted production throughput by 40% and improved workplace ergonomics, enabling the community business to scale operations.
